Two Michelin stars

Food appreciation was instilled in Gennaro Esposito from a young age. At nine years old he started work in his uncle’s pastry shop and the seed was sown for a life in the culinary arts. After being awarded his first Michelin star in 2001, he focused his energies on experiencing the world’s cuisines. A second Michelin star came in 2008, confirming his life’s passion and spurring his continued commitment to flavour, beauty, innovation and tradition.

Like most good chefs, Massimo’s first mentors were his grandmother and mother. It was in their kitchens where he first became enchanted by a passion for food. His professional life has enjoyed the support of renowned chefs and restaurateurs within in the Michelin constellation. Stints at El Celler de Can Roca, San Domenico, Arzak and five years in Ischia with two-star chef Nino di Costanzo helped solidify his enthusiasm for finding innovation within tradition. At IT Ibiza, Massimo fully flexes his creativity, his endless curiosity and his never-ending search for excellent produce.

Wine Cellar

The IT Ibiza wine cellar contains a thoughtfully curated selection of quality wines, Champagnes, cavas, sakes and craft beer from around the world. Over 800 labels are at hand, focusing on the most prestigious growers from regions afar afield as New Zealand, South Africa and Chile, plus classic drops from the best Europe has to offer, with an Italian bias, naturally. The team of expert sommeliers led by Giovanni Rapagnani are always available to guide diners towards exceptional pairings, new experiences and old favourites.

Head sommelier

Abruzzo native Giovanni Rapagnani brings his extensive knowledge to the IT Ibiza cellar. After completing his training in Italy and London, Rapagnani comes directly from the famed Osteria 60 in the five-star Baglioni Hotel in Kensington, having previously manned the cellar at the one Michelin star restaurant Galvin La Chapelle. He has stocked the IT Ibiza cellar with a superb selection of over 800 labels from around the world, with myriad drops available by the glass. He and his team are ready to take diners on a journey across global flavours each and every night of the week.
